Yesterday was Day 1 of my new self-made meal plan!
I went to Trader Joe's and Whole Foods to get the ingredients for homemade vegan sausage. It was easier than I thought! It just took some vital wheat gluten, spices, and cannelloni beans, about an hour, overnight refrigeration and voila!
Then I cooked up some sliced sweet potatoes for 2 days worth of low carb "sandwiches/toast." As a topping I mixed hummus, lots of thyme (which spilled like an avalanche on accident, but turned out making the spread REALLY good), garbanzo beans, spinach and more spices. Olive tapenade and curry seitan to top it off. It was so freaking good!
